Raw garlic features an excellent capacity to stimulate the immune system, acting as a potent antibiotic. In addition, its sulphur and selenium components are antioxidants, protecting cell membranes and ADN.

Potato comes second in importance after garlic, and the cultivated area is 18%.
Regarding onion, another main crop in Mendoza, it covers 9% of the total provincial cultivated area.

Vegetable exports are sent mainly to Mercosur, especially Brazil and Uruguay. The customers from the European community are Italy, France and the United Kingdom.
Garlic is the vegetable with the highest export demand and Mendoza supplies 97% of all garlic export from Argentina.
